Ingredients required for Gulab Jamun:
Milk powder - OneCup
Flour - Half cup
Baking soda - Half Tea spoon
Melted butter - 2 Table spoon
Milk -
Oil -
For the sugar syrup :
2 cups sugar
1 cup water
Cardamom
Saffron strands
How to prepare Gulab jamun
Mix the milk powder, flour and baking soda with butter. Add milk to make medium hard dough. Divide the dough into small pieces.
Make balls by gently rolling each portion between your palms. Place the balls on aplate. cover with a damp towel.
Heat the oil on high flame for some time, and then lower the flame. Slip in the balls one by one into the hot oil from the side of the pan. They will sink to the bottom of the pan, but do not try to move them. Instead, gently shake the pan to keep the balls from browning on just one side. After about 5 Minutes, the balls will rise to the surface.
The Gulab jamuns shoud rise slowly to the top if the temperature is just right. Slowly and gently agitate the jamuns to ensure even browning on all sides. The balls must be fried very slowly over a medium flame to ensure complete cooking from inside and even browning on the outside. Make sure that the temparature of the oil is is not too high as it can cause the Gulab jamuns to break.
Sugar syrup for Gulab Jamun
The syrup should ideally be made earlier and kept warm. Add 2 cups of sugar to 1 Cup of water. Drop in to the mixture, 4,5 cardamom pods, slightly crushed and a few strands of saffron. Mix the ingredients and heat at medium flame for 5-10 minutes until all the sugar dissolves. Take care not to over heat the mixture as that will caramelize the sugar.
Transfer the hot syrup into a serving dish. Keep the syrup warm using a low flame. Add the fried Gulab jamun balls into the warm syrup and leave it overnight for best results. Serve next day.
